This Bresaola is crafted from the salmon cut, or eye of round from the topside, known for its remarkable leanness. While this cut may present challenges when cooked as a steak, its true potential is revealed through our careful and meticulous curing process. In 2023, we refined our recipe, adding a subtle blend of salt, garlic powder, rosemary, and black pepper to enhance the beef's naturally rich flavour.
