Our House Salami is a testament to the art of traditional charcuterie, crafted from the finest pork sourced from ex-breeding sows that have enjoyed longer, outdoor lives. This careful selection ensures a rich and robust pork flavour that is beautifully enhanced by the addition of fiery Tellicherry black peppercorns, renowned for their bold, fruity profile. Each salami begins with coarsely ground, meticulously trimmed cuts of pork, which are thoroughly mixed and then cased in wide-gauge formats. The salamis are fermented for approximately 18 hours before undergoing a 3-4 month aging process, resulting in a perfectly matured product ready to be savoured.
