Meanwhile, Sobrasada, Mallorca's chorizo-esque spreadable sausage, offers a coarser texture distinctively Spanish. Could Tempus replicate these? Crafting Something Uniquely Tempus

Like Tempus products, the approach here is unique and fundamentally different from Italian and Spanish counterparts. The journey begins with a large salami made from sow belly, weighing around 5kg. Infused with confit garlic, garlic oil, and dried chive, these flavours meld into the meat during the drying process. After a slow fermentation period of up to three days, the salamis age for 2-3 months in Tempus' specially designed aging room. This initial flavour foundation, coupled with aging, lends a rounded depth to the product.

A Distinctively British Creation

In the second stage, Tempus introduces a fresh layer of spices to create something distinctly British and unmistakably Tempus. Dried orange peel, fennel, two varieties of Mexican chili, cayenne, and mace are carefully balanced to complement the lactic tang from the slow fermentation and the rich, garlicky pork. The process involves harvesting the salami, removing its natural casing, fine grinding the fully aged product, and meticulously blending in the fresh spices.
